According to the infographic, about 40 percent of food in the United States goes to waste. With that degree of waste comes a significant negative impact on the environment and economy. One way to decrease this waste is to make use of leftover food, rather than tossing it in the trash. The infographic provides meal ideas for breakfast, including leftover-oatmeal pancakes and beef hash cakes with chipotle yogurt; lunch, including chicken salad with couscous and oranges, and a leftover pasta and cheese frittata; and dinner, including an egg and bacon pie and spring vegetables in parmesan with goat cheese ravioli. In addition, it offers an idea for making a juice smoothie from leftovers.
