Whether for ethical or health reasons, more and more people are switching to a vegan diet. Veganism excludes all meat and dairy, with a focus on plants and plant-based proteins. One of the challenging parts about switching to a vegan diet is finding the appropriate substitutes for ingredients such as eggs, milk, and butter in cooking and baking. PETA (People for the Ethical Treatment of Animals) made this infographic called “A Guide to Replacing Eggs.” As the graphic explains, egg replacements are necessary for leavening, moisturizing, and binding. The easy-to-follow illustration is divided into three sections, one for each function. It explains what ingredients to use and how much to add to replace an egg in each instance.
